Wine Yarra Yering, “Underhill”, 2016

Wine Yarra Yering, “Underhill” is distinguished by noble elegance, delicate femininity and hidden strength. The grapes are obtained exclusively from one site in the western part of the company’s property. The bunches are harvested by hand, the berries are picked from the stems without crushing to preserve their integrity. Fermentation takes place in traditional open Yarra Yering half-ton fermentors. The stems are also added separately to the berries to increase the tannin content and add structure to the flavor of the wine. At the end of fermentation, the wine is drained from the coarse sediment and aged in French oak (30% new barrels). Bottled by gravity without filtration.
