“Gatto Matto” Pinot Grigio delle Venezie is a dry white wine made from Pinot Grigio grapes grown on the calcareous soils of the Veneto region. The crop is harvested when the berries reach the optimum level of ripeness, after which the grapes are carefully supplied to the winery, where they are carefully sorted and soft pressed. Fermentation takes place in stainless steel tanks at a controlled temperature of 20 C for 14 days. This is followed by bentonite clarification and single filtration.
