Wine Uccelliera, Brunello di Montalcino Riserva, produced from 2008 crop from the oldest vineyards in Castelnuovo dell’Abate, located at an altitude of 250-350 meters above sea level in the south-east of Montalcino. The manufacturing process begins with cold maceration of the skin at 10-12 C, which lasts 20-25 days and takes place in steel tanks. The growing activity of natural yeast leads to the top of malolactic fermentation, which replaced aging in Slavonian and French oak barrels for 36-42 months. After bottling the wine maturation continues for another 18 months in the cellars of the economy.
