Wine Tolaini, “Valdisanti” Tenuta S. Giovanni, Toscana IGT, 2016

Red wine “Valdisanti” is a Tuscan wine region, where in the area of Chianti Classico, on clay-limestone soils grown Cabernet Sauvignon, Sangiovese and Cabernet Franc. Once during the harvest the berries carefully sorted, then again sorted and separated from combs already at the winery. The wort was fermented at a controlled temperature in contact with the skin for 30 days. This is carried out every 4-6 hours immersion hats and remontazh. Malolactic fermentation takes place in oak barrels, of which 70% is used for the first time, the remaining 30% – again. Aged wine for 16 months in barriques and 12 months – in bottles. During this period, “Valdisanti” takes the necessary depth of flavor and aroma. The wine does not undergo filtering.
The label “Valdisanti” depicts a cup of wine and a snake. This element has been borrowed from the painting, which is kept in the ancient church of the XVI century. The church is located in a valley, not far from the place where the vineyards of the economy Tolaini. And the painting itself was written by the artist Rutilio Manetti Tuscan, whose name is associated experts flourishing art in Siena in the early XVII century. The painting depicts the two saints meet and exchange gifts. Saint Nicholas di Bari donated a tray of fruit and St. Giovanni Evangelista told him a cup of wine. Fruits symbolize the wealth of the Tuscan land, and a cup of wine and a snake – the desire to work and a passion for winemaking. This episode reflects the company’s philosophy Tolaini – use benefits conferred by the Tuscan countryside and to give their labor in return, whom they consider the creation of excellent wines.
