For the production of wine using grapes harvested from two farms in the vicinity of Monte Gharbi. First vineyard soil mainly limestone, which gives the wine concentration and spicy flavors. Second soil – clay, so the wine becomes rounded tannic structure and fruity notes. The grapes are harvested and sorted by hand. Then the grapes are folded into flat wooden trays podvyalivaniya, which lasts for three months. The fermentation process takes place at a controlled temperature with selected yeasts during 25 days. Malolactic fermentation takes place in 500-liter oak barrels. Batonnazh carried out once every two months during the first year of exposure. Wine is aged for two years in new French oak barrels and another six months in bottles.
