Wine Tenuta degli Dei, “Cavalli”, Toscana IGT, 2017, 1.5 L

The wine “Cavalli” differs from year to year, as the maturation of grapes is greatly influenced by weather conditions. In 2012, the summer was quite hot, but in late August, several storms all the same affected Tuscany. Thanks to an ideal vineyard exposure, the company managed to collect the fruits of high quality at the moment of ideal maturity. After alcoholic fermentation for 8-10 days and maceration, which lasted 10-14 days, apple-milk fermentation in oak barriques and tonne was carried out. In them, the wine was aged for about 18 months. Maturing “Cavalli” continued after bottling in bottles and took 12 months.
