Wine Shannon Vineyards, “Shannon Black”, 2018

Each year, one of the 5 Merlot clones (MO 03, 12, 192 and MO 343 and 348) from a single 3-hectare Mount Bullet vineyard demonstrates the unique characteristics of its harvest. This is due in part to the unique soil, which is composed primarily of Table Mountain sandstone and has a high percentage of quartz and silica crystals and a deeper kaolin clay base. If the vintage is special enough, it is created in small quantities into a dry red wine, “Shannon Black” , which is aged for 22 months in oak barrels from the French Bordeaux cooperage and bottled entirely by hand to ensure that this classic expression is fully preserved in the bottle.
