Secondo Marco, Valpolicella Ripasso Classico Superiore – energetic and elegant, unique and simple, but extraordinary, like nature itself, a red wine that is quite versatile in gastronomic combinations. The grapes for its production are grown at the foot of the Fumane Valley, at an altitude of 170 meters above sea level, on clay-limestone soil. The harvest is harvested by hand in the first ten days of October. The first fermentation with natural yeasts is carried out at low temperatures. In February, a second traditional fermentation takes place using the Ripasso method for approximately 15 days, in which the Valpolicella wine is fermented with Amarone wine marc. Aging takes place in several stages: 4 months in concrete tanks with a capacity of 50 hl, 24 months in Slavonian oak barrels with a capacity of 50 hl and 12 months in bottles after bottling.
