  • Category Orvieto DOC was awarded in 1971, and over the last 40 years, the region has experienced unprecedented growth: here today, produced some of the most popular Italian white wines in the world. On Orvieto DOC accounted for about three-quarters of the total wine production in Umbria. The region is divided into Orvieto Classico, which occupies the land around the tuff rock where the city of Orvieto, Orvieto and that is located on the northern and southern outskirts of the region.     Castello della Sala is 18 km from Orvieto. The castle is an example of medieval military architecture.     Yields vineyards, where grapes are grown for wine production, “San Giovanni della Sala”, is very low – only 7 tons per hectare. The grapes are harvested in the degree of ripeness of sugar and promptly delivered to the winery. Each variety is vinified separately. In order to obtain a good taste and flavor extract, wort part vinified using cold fermentation technology – the juice is left in contact with the skins for about 6 hours at a temperature of 10 C. Then this is added to the juice, which was obtained from other varieties of grapes by direct compression. The mixture was placed in stainless steel tanks, where fermentation takes place at a controlled temperature not exceeding 16 C. In these tanks the wine is kept on the lees for several months before bottling. Storage capacity of the vintage of 2013 – to 2020.
