Wine “Campo ai Sassi” is very similar to Brunello, but it is a more youthful and less complicated option. It is made from the same grape variety Sangiovese, but with younger vines, wines are obtained fragrant and elegant, with fewer tannins than the Brunello. The grapes for wine making is grown on the farm “Castel Giocondo” in Montalcino at an altitude of 250-450 meters above sea level. Sector, with the southern and south-western exposure, divided into rich soil. The main part of the crop is harvested by hand and only a small proportion – mechanically. Vinification is maceration on the skins for 16 days, fermentation in stainless steel tanks for 13 days at a controlled temperature not exceeding 30 C, and malolactic fermentation. Holding for 12 months in barrels made of Slavonian oak of 80 and 100 hl and in French oak barriques, then another 4 months wine matures in bottles. Wine storage capacity is 8-10 years.
