Raats, “Dolomite” Cabernet Franc is an elegant dry red wine made from Cabernet Franc grapes with a small addition of Malbec, which are grown in the company’s vineyards in the Stellenbosch region. The age of the vines ranges from 7 to 20 years. Soils are mainly granite. Harvested by hand from each parcel separately at the optimum maturity of each variety during February. The harvest is triple manual selection, crushing and cold maceration for 5 days. Fermentation proceeds at a controlled temperature of 28 C, followed by extraction using a basket press. Malolactic fermentation takes place in steel tanks. The wine is aged in 300-liter French oak barrels for 12-14 months. Wine is not filtered before bottling.
