Wine Poderi del Paradiso, “Saxa Calida” Rosso, Toscana IGT, 2020

“Saxa Calida” – red wine, worthy of representing the Tuscan wine region. It has a refined, rich, balanced flavor and a wonderful fruity bouquet. To create a wine using Merlot and Cabernet Sauvignon, the harvest of which are harvested from vines fifteen years. Particularly the establishment of the wine is fermenting in special steel tanks – rotovinifikatorah – rotating cylindrical vessel. In the process of vinification the wine undergoes maceration and malolactic fermentation. Matured wine “Sachs Calida” in new oak barrels for 16 months. From Latin “saxa calida” literally translates as “hot stone”. This name is symbolic, because the vineyard is located on the slopes of San Gimignano, which is dominated by the rocky soil. For centuries absorbs generous Tuscan sun, these stones become a cradle for vines.
