“Peppoli” – complex wine with good structure, fruity character, full of flavor. This style of wine is made possible by a unique micro-climate, in which grapes are grown to create a “Peppoli.” The vineyards are planted in the valley on the most favorable soils rich in minerals, which are ideal for growing Sangiovese, full of vitality and fruitiness. Tenuta Peppoli located in the heart of Chianti Classico, occupies 100 hectares, of which 55 hectares are given under the vineyards. First vintage “Peppoli” was released in 1988.
SBO harvest began in the second half of September with Merlot and Syrah, Sangiovese and ended collection. Each variety vinified separately. Sangiovese was crushed and fermented with the skins in stainless steel tanks for 10 days. For Merlot and Syrah preferred in the first stage was the maceration, which aims to preserve fruit and notes of soft tannins. Then fermentation was carried out at a maximum temperature of 28 C. After completed before winter malolactic fermentation all grades, wine assemble and put in drums (90% – Slavonian oak, 10% – from US) for holding for the next 9 months. The use of American oak barrels were used to complete the aromatic bouquet “Peppoli.” Thus, aging in barrels aimed to preserve fruit flavors and soften the tannins. After bottling the wine a few more months, “ripened” bottled in the cellars of the winery.
