Louis Bovard, “Terre a Boire” Epesses – an elegant white wine made from Chasla grapes. Terraced vineyards with a slope of 30% to 50% (17 to 27 ), are divided into sandy, clay and margelic soils. Planting density is 10,000 vines per hectare. Harvesting is carried out exclusively by hand when the berries reach the optimum ripeness level. Fermentation, malolactic fermentation and subsequent aging of wine are carried out in oak barrels for 8-10 months. The potential of wine is 5-8 years.
