Wine Lavacchio, “Cedro” Chianti Rufina DOCG, 2020

“Cedro” Chianti Rufina is a wine with a great personality. It is created in the utmost respect for nature and centuries-old traditions and perfectly expresses the characteristics of Chianti Rufina region, which is not accidentally called “the highest Chianti”. Grapes for wine making are grown in a beautiful terroir. Vineyards receive a sufficient amount of sunlight, the wind protects them from disease, and legumes planted between rows of vines, serve as a kind of fertilizer for the soil. Harvest is collected in mid-October. After separation from the crests, the fruits are carefully pressed. Fermentation and maceration take place in steel tanks at a controlled temperature for 20 days. The wine is aged in French oak barrels and cement tanks and lasts 24 months. After bottling the “Chedra” ripens for at least six months. The potential of wine storage is 10-12 years.
