Wine Gerardo Cesari, “Bosan” Amarone della Valpolicella Classico Riserva DOC

Fruits of research and about a dozen years of work of oenologists Gerardo Cesari – red dry wine “Bosan” Amarone della Valpolicella Classico Riserva . Wine is created from the varieties of Corvinus and Rondinella, grown in one of Valpolicella’s best vineyards. Harvest is harvested within two weeks, while for the production of wine only ripe, undamaged berries are used. Grapes are carefully transported to the winery, where it is dried in special well ventilated rooms. The drying process lasts until February, at the end of which the grapes lose about 30-40% of their original weight. Maceration is carried out in contact with the skin and lasts for 30 days. After this, the wort is placed in stainless steel tanks for malolactic fermentation. Then comes a three-year phase of aging, during which the wine is in large barrels of Slavonian oak and barriques from French oak. In conclusion, the wine is placed in bottles, where it “rests” for another 15 months before it goes on sale.

Elegant, rich, fascinating “Bosan” Amarone della Valpolicella Classico Rezerva is perfectly combined with game, stewed meat and mature cheeses. But the producers themselves call this wine a “drink for meditation”, emphasizing its self-sufficiency in gastronomic terms.
