Wine Diemersfontein, “The Prodigy” Pinotage, 2019

For the manufacture of dry red wine Diemersfontein, Coffee Pinotage, the producer uses Pinotage grapes harvested from six different vineyards with various terroir located in the Wellington region. After harvesting the grapes are transported to the winery, where it is subjected to cold pre-fermentation maceration for 12 hours. Fermentation takes place with the addition of yeast. The wort is pumped every three hours for 25 minutes. This ensures that the future of the wine has a rich color, rich aroma and excellent tannin structure. After fermentation, wine in French oak barrels for 6 months.
