“Aszu” – line of high-end wines created from berries “Aszu” based on ancient centuries-old traditions. The term “Aszu”, literally translated as “dry”, today is associated with a type of wine made from botrytised zaizyumlennogo grapes, that is slightly dried grapes, processed noble botrytis. These berries are picked by hand in special baskets, referred to as “Puttonosh.” Baskets are the unit of measurement of the amount collected berries, the average basket capacity of 30 kilograms slightly dried berries. For the manufacture of sweet “Aszu” 136 liters of dry white wine added a few baskets. The higher the value “Puttonosh” in the name of wine (on a scale of 3 to 6), the wine turns richer and sweeter.
Technology of production of wine “Assou” is: berries develop in huge vats and choke to a paste, then this mass is filled with dry wine, are at the stage of fermentation, and left for 24-48 hours with constant stirring. Then the wine is decanted into 220-liter oak barrels, where fermentation is completed and will be maintained wine. The barrels are stored in a cool place tightly closed, so they slow fermentation process continues for two years. After bottling, the wine is aged for about a year.
“Aszu 6 Puttonyos” created out of two Hungarian grape varieties – Furmint and Harshevelyu. Tokaj Furmint variety gives the wine a unique flavor and fresh taste with hints of mineral, its thin skin facilitates better botritizatsii and accumulation of sugar. Sort Harslevelyu has less acidity, but is unusually rich, fruity flavor.
