Wine Cennatoio, Chianti Classico “Avorio” is obtained from the elegant blend of Sangiovese and Colorino grapes. The dominant in the blend is Sangiovese – a favorite variety of Tuscany. To it add less known Tuscan varieties of grapes – Canajolo, Colorino, Chiliegiolo and Mammolo. The classic Chianti shows shades of bitter cherries, violets and dried herbs in flavor. Over the years, the Chianti blend has evolved, adapting to changes in consumer preferences and advances in winemaking technology. There was a fierce debate when the Chianti name laws officially authorized red varieties from Bordeaux – Cabernet Sauvignon, Cabernet Franc and Merlot for use (up to 15%) in Chianti wines. Many connoisseurs considered this change to be a failure, while others welcomed the aromas of dark fruit and the depth of color, which in Chianti introduced Bordeaux varieties. Today, “secondary” grades in the blend can vary at the discretion of the manufacturer.
