Castel Sallegg, Sauvignon, Alto Adige DOC – bright dry white wine made from Sauvignon Blanc grapes, which is grown on clay-sandy soils of the “Mitterdorf” vineyard on the Leisenhof estate. The estate is located in Caldaro, Alto Adige, the northernmost wine-growing province of Italy. Wine was produced in this area before the arrival of the Romans, and some evidence indicates that wine production dates back to the Iron Age. Winemaking continued to develop into the Middle Ages thanks to the dedicated care and hard work of the monastery employees. The vineyards are located at an altitude of 500 meters above sea level, which, combined with well-drained soils, creates ideal conditions for the ripening of Sauvignon Blanc. The vines are processed according to the Guyot system. Harvested when the berries reach optimum ripeness. At the winery, the berries are cold macerated, followed by fermentation at a controlled temperature of 15-18 C in stainless steel tanks. The wine is also aged in steel containers on fine lees for 4 months. The potential of the wine is at least 5 years.
