For the preparation of white dry wine “Collenobile” Grechetto di Todi Superiore DOC, the producer uses the Grechetto grapes. Crop carefully harvested by hand, and then subjected to soft pressing in special presses. Alcoholic fermentation is carried out in new oak barriques at a temperature of 14-15 C for 20-25 days. Wine aging takes place in steel tanks. The wine will make an excellent pair of various snacks, soups, spicy or blue cheeses, clams and fish dishes.
