Wine “Caiarossa”, Toscana IGT, 2013

Dry red wine Caiarossa, Toscana IGT belongs to the representatives of “Supertuscany” and demonstrates all the complexity and nobility of the Tuscan vineyards. Seven grape varieties in a blend create the perfect picture of the Podere Serra all’Olio terroir. The berries are harvested by hand from late August to early October, as they reach optimum ripeness, undergoing primary sorting in the vineyard. Upon arrival at the winery, the grapes are carefully selected on a sorting table and separated from the ridges. Maceration lasts 20-30 days, then alcoholic fermentation starts for each variety separately in concrete and wooden vats using exclusively natural yeast. Upon completion of the vinification processes, the wine is aged for 11 to 20 months in tonne and oak barrels, 30% of which are new, and 6 months in concrete containers, and then bottled.
