“L’Eremita”, Recioto della Valpolicella – hedonistic red sweet wine created for “meditation, and temptation.” Production of this elegant, fresh, well-balanced wine to enjoy in the family occupies a special place Tessar. The harvest in the vineyards of the municipality Montague Krozara begins in the second half of September. Select only healthy berries are high in acid. Clusters are placed in specially prepared boxes of 6 kg so as to provide fresh air to all the fruits. In the spring, after 6-7 months of shrinkage and podvyalivaniya, grapes fermented. For several centuries, these gentle hills became the cradle of high quality wines thanks to the unique sunny microclimate and rich volcanic soil. They recognize that the quality of wine in the first place depends on the vineyards and then from the cellars, where the cycle of winemaking. The philosophy of winemaking Ca’Rugate expressed a desire to maximize their wines reflect varietal characteristics of the grapes. Modern technology, such as pneumatic pressing and easy temperature control of fermentation give an excellent opportunity for this.
