“San Roman”, 2011 – very expressive, aromatic wine with dominant notes of ripe red fruit. Its full and rich taste with good texture and bright fruit and spicy nuances, completed long aftertaste, with mineral finish. Wine created by the Spanish winemaker Mariano Garcia with great respect to the vineyards and the land that nurtured them. “San Roman” 2011 combines the strength, depth and elegance, and is capable of long-term development in the bottle, reaching a peak of maturity in 2030.
Wine “San Roman” created from grapes Tinta de Toro (100%), grown on rocky and sandy soils of vineyards in the Spanish region of Toro. In production processes used only the highest quality and healthy grapes reached optimum maturity. 2011 season was characterized by low rainfall in the winter, but with the arrival of spring were observed early frosts. Perfect ripening of the grapes provide a dry and hot summer, with sunny days alternated with cool nights, while maintaining excellent freshness and balanced acidity in the grapes. Manual harvesting took place earlier than usual – September 5. The collected fruit is subjected to short maceration and fermentation for 20 days. Kept wine 24 months in barrels of French and American oak, which are used as new (mostly), and were previously used. Before bottling the wine undergoes a light filtration. Vintage 2011 was bottled in February 2014.
In wines with the name “San Roman” oenologist Mariano Garcia produces the new plant MauroDos, located on the banks of the River Duero. This is the second project of Mauro bodega, which was founded in 1998. The farm has in his possession 35 hectares of vineyards, which are located in historic districts Villaester and San Roman de Orniha. The main varieties cultivated in the vineyards, is Tempranillo, which is also known as Tinto de Toro Tinto del Pais and. The average age of the vines is 35 years. Proper system viticulture combined with modern technology provide an excellent harvest. The soil in this area is rocky or sandy with a mixture of clay, so that in times of drought persists necessary amount of moisture.
